Bluefin Tuna and Cucumber Canapé
For the dish:
- 2 lbs of Toro diced 1/4 inch (If Bluefin tuna belly (Toro) is not available, use the best tuna you can find
- English cucumber sliced 3/8 inch thick
- Hawaiian red coarse finishing salt
For the marinade:
- 4 oz sweet chili sauce
- 4 oz sweet soy sauce
- 1 oz pomegranate molasses
- 1/2 c chopped scallion
- 1/4 c chopped Thai basil
- 1/8 c chopped cilantro
- 1 clove garlic, minced
- 1/4 c fresh ginger, minced
- 1/4 c rice wine vinegar
- 3 T sesame oil
- 1 T sesame seed
- 2 oranges, zested and juiced
- 2 limes, zested and juiced
Mix marinade with Toro for 20 minutes.
Spoon on top of cucumber slice.
Sprinkle with finishing salt.
